Amaranth is a great companion plant to a lot of vegetables and improves the soil health. It is a hardy annual that grows to 1.5 metres. Their leaves and stems are used like spinach and are low in oxalic acid.  Amaranth flower heads are attractive red in colour.  Also known as pigweed is another great dynamic accumulator. Harvest amaranth leaves at young stage.
